Fresh truffles must be stored in the refrigerator at temperatures between +2°/+6°C., having wrapped them first in absorbent paper and placed them in an airtight box. You should check your truffle every day and change the absorbent paper frequently in order to prevent the truffle becoming damp. In this way you can preserve the fragile white truffles and "bianchetto" truffles for 7/8 days, while black truffles can be preserved longer periods. For truffles harvested during cooler periods the shelf life is even longer. We suggest that truffles are eaten as soon as possible to enjoy their characteristic flavour at its best.


Truffles must be soaked in cold water for several minutes. You can then use a small soft brush to remove the soil under running water. Once dry the truffles are ready to be used. Sliced into thin sheets or grated (summer black truffles) they will enhance the taste of every single course.
